Allergy-Safe Latkes

These potato pancakes are egg-free, dairy-free, and wheat-free. Because they don't use egg, they get less brown than traditional potato pancakes made with eggs and wheat flour, but taste otherwise very close. The brands of rice flour, egg replacer, and rice milk I used to test the recipe (Bob's Red Mill, Ener-G, and Rice Dream, respectively) are all certified as kosher (parve); all are available nationwide, though you may need to look at larger supermarkets or health food stores to find the egg replacer and rice flour.

Cook Time: 0 hours, 10 minutes

Ingredients:

  • 4 to 5 medium potatoes, peeled and coarsely grated (about 2 1/2 c grated)
  • 1 small onion, peeled and finely chopped (about 1/2 c) (optional)
  • 1/2 c rice flour
  • 2 T Ener-G Egg Replacer
  • 1/4 c non-dairy milk alternative (such as rice milk)
  • salt and pepper
  • neutral high-heat oil for frying (corn, canola, safflower, etc.)

Preparation:

  1. In a large bowl, thoroughly mix together potatoes, onion, flour, Egg Replacer, and milk. Season with salt and pepper to taste.
  2. Heat frying oil in a large skillet over medium-high heat. Add latke mixture in large spoonfuls, pressing down with a spatula to flatten as soon as you put a spoonful in the skillet, and being careful not to crowd the latkes. (You may need to cook these in multiple batches). Cook for 3 to 4 minutes per side, turning once during cooking. Serve immediately, garnished with applesauce.

Substituting ingredients: If you're not cooking for multiple food allergies, feel free to substitute the flour, non-dairy milk, and Egg Replacer used in this recipe with their more common alternatives:

  1. To substitute rice flour, use an equal amount of all-purpose flour or matzoh meal.
  2. To substitute eggs for Egg Replacer, use two eggs or one whole egg and one egg white. If you use eggs in this recipe, you don't need to use any milk (the milk is included to replace the liquid the eggs would otherwise contribute).
  3. If you're using Egg Replacer but would like to use cow's milk, simply substitute an equal amount of milk for the non-dairy alternative.
