Gingered Pears

Throw these pears into the oven at the same time you're roasting a chicken or some vegetables for dinner. They require little effort, and make either a healthful and low-fat side dish or a nice dessert with some ice cream or similar dairy-free frozen treat. I like Bosc or d'Anjou pears the best for this recipe, but any variety will work. Peel the pears or not based on your personal preference.

Ingredients:
  • 6 to 8 pears, any variety, seeds removed and cut into large chunks
  • 1 one-inch piece fresh ginger, peeled and finely grated, or 1 Tbsp powdered ginger
  • 1 Tbsp brown sugar (optional)
  • 1/4 c water
Preparation:

  1. Preheat oven to 350 F.
  2. In a casserole or baking dish, spread all pears in a single layer. Sprinkle evenly with ginger and (if using) sugar. Pour water in the bottom of the dish.
  3. Bake pears for 30 to 40 minutes, or until the edges are barely brown. Serve immediately, or refrigerate and serve chilled.
