Satsuma Orange and Pomegranate Salad

Satsumas and pomegranates are often on sale in early winter.

Satsuma oranges are a type of mandarin orange that are easy to peel and super-sweet. They are in season in early winter, and are often sold with leaves attached. If you can not find satsumas, substitute clementines, which are similar in taste and texture.

Total Time: 15 minutes

Yield: 5-6 servings

Ingredients:

  • 10 satsuma oranges

  • 2 pomegranates

  • 1 Tablespoon honey

  • 1 Tablespoon (packed) minced fresh mint

  • Mint leaves for garnish.

Preparation:

Peel and section satsumas. Remove seeds from pomegranate.

Toss together all ingredients, and spoon into bowls. Garnish each bowl with a fresh mint leaf.
