Chocolate covered strawberries

The three food groups of romance: chocolate, strawberries, and champagne.

I love chocolate covered strawberries so much I served them at my wedding. Thanks to Enjoy Life Foods dairy- and soy-free chocolate chips, you can now make an allergy-friendly version. They are simple enough for kids to make, and can be a fun Valentine's Day or Mother's Day activity with kids.

Prep Time: 30 minutes

Total Time: 30 minutes

Yield: 20 strawberries

Ingredients:

  • 1 box of strawberries (approximately 20)

  • 1 bag soy-free, dairy-free chocolate chips, such as Enjoy Life Foods

Preparation:

Rinse and pat dry strawberries, leaving stems and leaves intact.

Line a baking sheet with waxed paper.

Place chocolate chips in a microwave-safe bowl. Heat for 30 seconds at a time, stirring between heating sessions. Heat until chocolate is just melted – do not overheat.

Hold a strawberry by the stem and dip into chocolate about two-thirds of the way up the strawberry. When pulling the berry back out of the chocolate, twist it gently to shake off the excess chocolate.

If the chocolate starts to get too hard to dip the strawberries, return it to the microwave for 30 seconds.

If desired, sprinkle with colored sugar or sprinkles before they cool completely.

Place on baking sheet and allow to cool until chocolate is firm. Serve the same day you make them for freshest flavor. if your home is very warm, place strawberries in fridge for 30 minutes to help them cool.
