This is a quick recipe that you can toss together in the morning and have waiting for you at dinnertime. Don't be dismayed by the amount of garlic. The flavors of lemon, thyme, and garlic melt together into a mild yet flavorful medley.

Ingredients:
3 pounds red skinned potatoes
2 boneless, skinless chicken breasts
8 cloves of garlic, peeled
1.5 t. thyme
2 cups water or chicken broth
1 T. olive oil
1 t. salt
Preparation:
Cut potatoes into 1/4 inch thick slices. Place half of potatoes on the bottom of the slow cooker.
Cut each chicken breast in half. Place on top of potatoes. Sprinkle with thyme and garlic cloves. Layer remaining potato slices on top of chicken, overlapping each slice to make a crust.
Pour water, olive oil, and lemon juice over potatoes and chicken.
Cook on high for 4-5 hours, 7-8 hours on low.
