Egg-Free French Toast

Yes, it is possible to have delicious, custardy French toast even if you have an egg allergy. Top our egg-free recipe with one of our recipe variation toppings for a special breakfast.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 6 pieces of toast

Ingredients:

  • 1 cup milk (may substitute soy or rice milk)
  • 1/2 cup chickpea flour (see below for purchasing information)
  • 2 Tablespoons white flour
  • 1/2 teaspoon ground cinnamon
  • 1 Tablespoon sugar
  • 1/4 teaspoon vanilla extract
  • 6 slices of day old bread

Preparation:

  1. Whisk together all ingredients except bread. Allow to stand for 5 minutes.
  2. Preheat griddle to medium heat. Whisk batter again.
  3. Dip a slice of bread into batter. Coat both sides, shake off excess, and place on griddle.
  4. Fry until toast begins to brown around edges. Gently loosen toast from pan using spatula, then flip and fry on other side. Remove from pan.
  5. Repeat for remaining bread slices, stirring batter before dipping each slice.
  6. Dust with powdered sugar and top with fruit. Serve immediately.

Try some of these other French Toast toppings:

  • Banana-Hazelnut: Spread with Nutella (chocolate hazelnut spread, nut suitable for those with nut allergies)and top with banana slices.
  • Diner classic: Top with fresh berries and whipped cream.
  • Cinnamon apple: Top with warm applesauce and cinnamon sugar.
  • Southern peach crumble: Top with fresh or poached peaches and chopped pecans with whipped cream.
  • Blackberry sage: Substitute sage for cinnamon in above recipe and top toast with blackberry jam.

About chickpea flour: Chickpea flour is made from ground chickpeas, sometimes called garbanzo beans. It is available in many health food stores and grocery stores in the gluten-free flour section. It can also be purchased online from Bob's Red Mill.
