Victoria is a freelance writer and editor with a particular interest in restricted-diet cookery and lifestyle. Her interest in food allergies was sparked by her own experience with a related condition.

Experience:

Victoria was diagnosed with celiac disease (an incurable autoimmune disorder marked by an intolerance of gluten, a protein found in wheat, rye, and barley) as a college student in 2000. At that time, since there was little widespread information on the condition, she began an intense self-education on celiac disease and related conditions, including wheat allergy. Victoria's freelance writing career has included restricted-diet and science features for Living Without Magazine and mental_floss. She has also worked as a freelance editor for academic dissertations and university presses.

Education:

A former Jeopardy! champion, Victoria holds a bachelor's degree with honors from the University of Georgia.
