Italian Food for Wheat Allergies?

Believe it. Rice is one of the least common allergens in America, and one preparation that can be found at quite a few Italian restaurants is risotto. It's also, despite its tricky reputation, not difficult to make at home. If you're ready to give it a whirl, try my recipe for Mushroom-Sage Risotto. It's written to be dairy-optional and includes no other common allergens.
